The first thing to remember is that turkey is pretty lean. Fat is what adds moisture and flavour to meat, and turkey doesn’t have a lot of it. So even if you don’t overcook your turkey, it can still be dry and bland. This is the reason why you should have a flavour injector to inject marinade into the turkey. This will guarantee flavour and moisture to the turkey.

Another trick that helps with the turkey’s moisture is to brine it. Essentially, this involves soaking the turkey overnight in a saltwater mix to keep the moisture and make the turkey more flavourful.

Last but not least, rubbing butter or oil under the skin also helps with moisture and flavour. If you mix the butter with herbs, you’ll have great flavour going into your turkey. This also prevents the meat from drying out as much, even if you overcook it. Some people also decided to wrap the turkey in bacon for the same reasons.
