Ingredients:
- 1 x 7-9 pound Pork Crown Roast
- 3 tablespoons Kosher salt
- 1 tablespoon ground black pepper
- 4 tablespoons unsalted butter, softened
- Optional Glaze: Use your favourite glaze or try a simple whiskey glaze (see below).
Whiskey Glaze:
- 2 cups Chicken broth
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire Sauce
- ½ cup whiskey
- 1 clove garlic, minced
- 2 teaspoons ginger paste
- ¼-½ cup honey
- ½ cup apple cider
- ½ teaspoon Kosher salt
- 1 tablespoon unsalted butter
Instructions:
- Preparation: Rub the roast with salt and pepper. Refrigerate uncovered for at least 6 hours.
- Cooking: Preheat your oven to 450°F. Place the roast on a metal rack over a baking sheet. Brush with butter and roast until the internal temperature reaches 110°F.
- Glazing: Reduce oven to 325°F. Brush with whiskey glaze and continue roasting until the internal temperature reaches 140-145°F.
