As we continue our comfort food season series, it’s time to highlight a classic: chicken. Versatile, hearty, and packed with flavour, chicken is at the heart of many comforting dishes. One timeless favourite is Canja, a traditional Portuguese chicken and rice soup that’s perfect for chilly days or when you need a nourishing meal.
Canja Recipe (one of many)
Ingredients:
- 1 whole chicken (or bone-in chicken pieces)
- 8 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bay leaf
- 1 cup short-grain rice
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
- In a large pot, add the chicken, water, onion, garlic, carrot, and bay leaf. Bring to a boil, then reduce heat and simmer until the chicken is fully cooked (about 45 minutes).
- Remove the chicken, discard skin and bones, and shred the meat.
- Strain the broth, return it to the pot, and bring it back to a simmer.
- Add the rice and cook until tender (about 15-20 minutes).
- Stir in the shredded chicken, season with salt and pepper, and let it heat through.
- Serve hot with a squeeze of lemon for extra brightness.
