Comfort Food Season: Let’s Talk Chicken

As we continue our comfort food season series, it’s time to highlight a classic: chicken. Versatile, hearty, and packed with flavour, chicken is at the heart of many comforting dishes. One timeless favourite is Canja, a traditional Portuguese chicken and rice soup that’s perfect for chilly days or when you need a nourishing meal.

Canja Recipe (one of many)

Ingredients:

  • 1 whole chicken (or bone-in chicken pieces)
  • 8 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bay leaf
  • 1 cup short-grain rice
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. In a large pot, add the chicken, water, onion, garlic, carrot, and bay leaf. Bring to a boil, then reduce heat and simmer until the chicken is fully cooked (about 45 minutes).
  2. Remove the chicken, discard skin and bones, and shred the meat.
  3. Strain the broth, return it to the pot, and bring it back to a simmer.
  4. Add the rice and cook until tender (about 15-20 minutes).
  5. Stir in the shredded chicken, season with salt and pepper, and let it heat through.
  6. Serve hot with a squeeze of lemon for extra brightness.
