Ingredients
2 kg pork ribs
2 tsp garlic powder
1 tsp onion powder
2 tsp paprika
2 tsp salt
1 tsp black pepper
1/2 tsp cumin
1 tsp chili or Cayenne powder (optional)
2 tbsp olive oil

BBQ Sauce
4 garlic cloves (minced)
3 cups ketchup
1/2 cup orange juice
1/3 cup white vinegar
1/3 cup Worcestershire sauce
1/3 cup molasses
1/3 cup brown sugar
2 tbsp yellow mustard
1 tbsp hot sauce
1 tbsp soy sauce
1 tsp cooking oil
1/2 tsp red pepper flake

Instructions

Gather the sauce ingredients. In a saucepan, sauté garlic. Add remaining sauce ingredients and allow to come to a boil. Turn down heat and let simmer for 15 minutes, stirring often.
While sauce is getting ready, combine rub ingredients in a medium mixing bowl. Set aside.
Remove sauce from the heat and let it cool down.
Trim and clean ribs. (You can ask our staff to do this for you if you so wish).
Rub ribs with spices and let them sit for at least 30 minutes at room temperature (not more than 45 minutes).
Preheat the grill. Cook ribs over an indirect medium heat for about an hour. Turn once and cook for additional 30 minutes. Avoid burning. When the ribs have finished cooking, you should see no or very little pink.
Serve with the sauce you’ve prepared. Add some of your favourite bbq sides if you if prefer.
